Mandarin Orange Cheesecake

Try this delicious cheese cake with a lovely mandarin orange decoration with delicious orange syrup on top.

Ingredients for cheesecake crust:
-1 & 3/4 of a cup of graham cracker crumbs
-1/2 a cup of melted butter
-1 tbs Sugar
-1/2 tsp cinnamon
-you will also need an 8" spring form pan
Ingredients for cheesecake:
-1 Lb cream cheese
-2 eggs
-1/2 cup of sugar
-1 tsp vanilla
-1 pint sour cream
- 4 tbs sugar
Ingredients for decorations:
-11 oz can of mandarin oranges
-1/3 a cup of saved syrup from the mandarin oranges
-1/4 a cup of sugar
-1 tbs cornstarch
Directions:
1. mix 1 3/4 cups of the graham cracker crumbs, 1/2 cup of melted butter, 1 tbs of sugar, and 1/2 tsp of cinnamon in a mixer until smooth. Pat into the bottom and sides of an 8" spring form pan. Bake at 350 degrees for 5 minutes.
2. Mix 1 Lb of cream cheese, 2 eggs, 1/2 a cup of sugar, and 1 tsp vanilla in a mixer. Pour into crumb crust. Bake at 350 degrees for 30 minutes.
3. Drain and save 1/3 a cup of the syrup from the 11 oz can of mandarin oranges (set aside both the oranges and syrup for later). Mix 1 pint sour cream and 4 tbs sugar in the mixer. Pour over the cheesecake. Bake at 350 degrees for 15-20 minutes. Let it cool in the fridge overnight.
4. Decorate the top with the mandarin oranges (note: you can do this anyway you like) :). Blend 1/3 a cup of the orange saved syrup from earlier, 1/4 a cup of sugar, and 1 tbs of cornstarch in a saucepan. Cook over medium heat stirring constantly until thick and clear. Let it cool and spoon it over the cheesecake.
